"Holy-Smokes-I-Forgot-It's-Lent!" Emergency Tuna Casserole

The "Holy-Smokes-I-Forgot-It's-Lent!"
Emergency Friday Night Tuna Casserole
Preparation time: Approx 35 minutes
Preheat oven to 400 degrees

(Measurements are approximate since I don't use measuring cups for this, being in too much of a hurry to bother. :-) Vary according to taste -- ie: Add more noodles if you like it more filling or throw in another can of tuna if you like it more fishy.)

1 can tuna in spring water

1 can Cream of Anything Condensed Soup (Chicken or Celery are good)

8 oz (1/2 bag) of medium width egg noodles

1 cup frozen mixed vegetables

1 tsp dried pizza seasoning (oregano, basil, rosemary, garlic)

1/2 stick butter

3/4- 1 cup Italian-style bread crumbs

Preheat oven to 400 degrees. Prepare the noodles according to directions on the bag. Meanwhile, melt the butter in the microwave in a medium bowl. Add breadcrumbs to the butter and mix until you have the consistency of damp sand that you could make a sandcastle out of. Set breadcrumb mixture aside. Defrost the veggies in the microwave in a big bowl. When the noodles are done, drain and put in the veggie bowl. Add tuna, condensed soup, pizza seasoning and vegetables to this and mix together well. Put tuna noodle mix into a casserole dish and sprinkle the breadcrumb mixture on top. Bake uncovered for about 20-25 minutes or until the breadcrumbs turn golden brown.

Serves 4.
