Summer Barbecues - Part I of IV: Burgers!Grilled Tuna Burgers 7 ozs. of canned chunk light tuna, drained 1 cup dry, seasoned bread crumbs 2 egg whites, slightly beaten 1/2 cup minced celery ½ tspn. of dried dillweed 1/2 cup low fat sour cream 1/4 cup onion, minced Mash tuna with a fork in a mixing bowl. Mix in bread crumbs, egg, celery, dill, sour cream, and onion. Form into 4 patties. Barbecue over medium coals for 3 to 4 minutes on each side or until cooked through. Serve on sourdough hamburger buns garnished with desired vegetable toppings. Santa Fe Burgers In medium bowl, combine ground beef, cheese, 1/4 cup salsa, tortilla chips, green onions, cumin, cilantro and garlic salt. Mix together lightly but thoroughly. Shape into 4 patties. Grill patties on oiled rack 5 -6 in. away from heat over medium hot coals and 5 minutes on each side or until internal temp reaches 160 F. Serve on buns garnished with remaining salsa, light sour cream, black olive slices and leaf lettuce if desired. Zesty Chicken Burgers In a food processor bowl or blender container, place the onion, parsley, mustard, salt and pepper and pulse until onion is minced but not pureed. Transfer to large bowl and add ground chicken. Add rice and stir until well mixed. Form into 4 patties. Grill over medium hot coals for approximately 5 minutes on each side or until nicely brown and cooked through. Serve on whole grain buns with Dijon mustard, red onion, lettuce and tomato if desired.
