Okay, so maybe there actually are 101 uses for the stuff, but I've only managed to come up with about 22 of them. True, this fluffy white concoction is good for the dependable low-fat, healthy and quick snack topped with your favorite fresh fruit if you're feeling adventurous, but it also serves as a great low-fat alternative to many dishes that require thickening agents. Rather than congeal all of your favorite dishes with heavy creams, mayo or a flour and water paste, try blending the same amount of a good-quality cottage cheese in a food processor and adding to your favorite dips or sauces to thicken them up. Most cold vegetable dips that require their makers to reach for sour cream or mayo, for example, can be successfully and tastefully made using pureed cottage cheese as an alternative. Here are a couple of great examples of the power of cottage cheese. Both can be made in advance and stored in the refrigerator until serving time.
Dilled Vegetable Dip
1 cup low-fat cottage cheese
2 tblspns. of slice green onion
2 tblspns. snipped fresh parsley
1 tspn. dried dillweed
1 tspn. Worcestershire sauce
2 cloves of garlic, crushed
Dash of pepper
In a blender container, place the cottage cheese, green onion, parsley, dillweed, Worcestershire sauce, garlic and pepper. Cover and blend until smooth. Chill, covered, for least 1 hour. Serving Suggestion: Hollow out a large red bell pepper half and use as a bowl for dip for your favorite raw veggies, crackers, or cocktail toast. Serves 8. (27 calories, 1 gram of fat, 4 grams of protein, 1 gram of carbohydrates per serving)

Apples with Peanut Butter Dip
1 cup low-fat cottage cheese
2 tblspns. creamy peanut butter
ΒΌ tspn. ground cinnamon
1 to 2 tspns. skim milk
3 medium apples, cored and sliced
For dip, in blender container, place the cottage cheese, peanut butter, and cinnamon. Cover and blend until very smooth. If necessary, stir in enough milk to make dip of desired consistency. Serve dip chilled with apple or pear slices as a snack. (106 calories, 4 grams of fat, 7 grams of protein, 13 grams of carbohydrates per serving.)
