Basil is probably the most popular culinary herb. Large quantities are consumed as pesto. Basil contains a lot of potassium and calcium as well as Vitamin C. Consumption of fenugreek seeds can lower cholesterol and blood sugar. Horseradish root and horseradish oil can help to inhibit the development of cancer. Its oil had the highest antioxidant activity of 28 different plants being tested. It also has strong antimicrobial properties. Horseradish is related to broccoli and other Crucifers. So does ginger. Parsley is often used as a garnish, and many people will leave it untouched on their plates. This is a mistake for this herb is high in calcium, potassium, and iron. Rosemary can help to fight plaque and dental cavities. Savory is an aid to learning and memory. So is oregano. Watercress is high in both folic acid and Vitamin C. Low blood levels of folic acid increases the risk of Alzheimer's, and is associated with depression. A number of herbs and flavorings exhibit antioxidant properties. The best performer of all was turmeric. When the relative antioxidant capacity of common garden produce items was compared, garlic came out at the very top. Onion ranked below broccoli. Of all the herbs garlic, chives, and their relatives are the real workhorses of the plant world. These are high in sulfur, a beneficial phytochemical.
