WHAT'S COOKING FOR THE HOLIDAYS?

The holidays are such a special time. Whether it's quick, family meals or dishes for Christmas open houses, here are sources of great recipes for those memorable occasions.

Without a doubt pasta is tops on most everyone's list. Need ideas for sauces? There's no better source than the newly revised edition of the highly acclaimed "The Encyclopedia of Sauces for Your Pasta-the Greatest Collection of Pasta Sauces Ever in One Book" by Charles A. Bellissino from Marcus Kimberly Publishing.

This witty, unique, comprehensive volume is destined to be the most used cookbook and reference in your library. If you're confused by the many kinds of pasta and how to cook them, Bellissino has the answers. He devotes a chapter to each kind of sauce, such as those made from uncooked herbs, nutmeats, vegetables, etc. A page is devoted to each recipe. Once you've tried one, record your response by checking the appropriate rating at the top of the page. In case you're wondering, the publishing company is named after Bellissino's children

When you're short on time, Rachael Ray comes to the rescue. "30-Minute Meals 2," a companion cookbook to her Food Network show, 30 Minute Meals, was released in May. In addition, she is also host of $40 a Day. She started out teaching cooking classes, which were so phenomenally popular that they led to the television shows.

These quick and tasty dishes feature easy to follow recipes. Ray organized them into seven chapters, including family-style suppers, very special dinners, and healthy meals. For each meal, she features a menu with tasty, innovative recipes for all the different dishes. My favorite is the vegetarian Southwestern Stuffed Peppers. With these recipes, people will think you spent all afternoon in the kitchen.

For special occasions, Ray presents Passport Meals--foods with an international flavor that can virtually transport you for the evening to exotic places.

Scattered throughout the book are helpful hints and time-saving ideas.

Lake Isle Press has published all of Ray's best-selling cookbooks, which include "Veggie Meals," "Comfort Foods," and "Rachael Ray's 30-Minute Meals." Her latest title, "30-Minute Meals: Get Togethers" was published in October.
