Cooking and gardening go hand in hand. Summer is the peak time for fresh-picked, homegrown garden produce. If you're short on ideas for those summer meals, here is a fresh crop of cookbooks that may help.

Doubtless everyone has heard that a Mediterranean diet is a healthy one. Now there's a new healthwise cookbook that will help you achieve your goals. "The Mediterranean Diet Cookbook-Recipes From the Island of Crete" is by Jacques Fricker and Dominique Laty, published by Ici La Press. Fricker is a French physician who specializes in nutrition, and has written several books on nutrition, diet, and health. Laty is a superb cook, and a specialist on health and foods. She has written several books on lifestyle and well-being. This dynamic duo begins by looking at the history of the Mediterranean diet and why it is such a healthy one. They present scrumptious, easy to make recipes that rely on lots of fruits, vegetables, olive oil, and other healthful ingredients. This book is illustrated in full color, including art from mosaics and murals of Knossos.

Summer days can be hot. What we need are dishes we can make ahead of time. "Easy Japanese Pickling In Five Minutes to One Day" by Seiko Ogawa from Kodansha America Inc. has 101 delicious authentic Japanese pickle recipes that friends and family will love. Illustrated in full color, this book features quick and easy dishes. When cooking is required, that's done in the microwave. To save on clean-up, the author recommends plastic bag pickling. There are wonderful veggie recipes for every season as well as ones for fruits, seafood, and meats.

From The Cook's Illustrated Library comes "How to Cook Garden Vegetables." This step-by-step guide is fully illustrated, and features wonderful ideas for everything from asparagus and broccoli to tomatoes and summer squash. It is suitable for novice and experienced cooks alike, and explains how to boil, steam, braise, grill, broil, and sauté different vegetables. In addition to basic instructions, it contains many recipes.

Just in time for the 2003 gardening season Houghton Mifflin released "Entertaining For A Veggie Planet" by Didi Emmons, author of the best-selling "Vegetarian Planet." This refreshing book contains 250 down-to earth recipes for every occasion-from brunches to cocktail parties. There are delicious burger and pizza recipes that everyone will love along with tempting rice dishes, pasta, dessert, soups, and everything in between. The recipes are simple to make. Even non-vegetarians will love this book because the casseroles, stews, and other dishes are so satisfying.
