Savoury Muffins

Savoury cheese muffins are fast and easy to prepare while preheating the oven to  200 degrees.

Ingredients:
  • 2 cups self-rising flour
  • 1 1/2 cups grated cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon cayenne powder
  • 1/2 teaspoon ground cardamom
  • 1/2 cup chopped fresh basil
  • 3 tablespoons finely chopped salami
  • 3 soft sundried tomatoes, finely chopped
  • 2 eggs
  • 200 ml milk
  • 3 tablespoons oil
Directions:
  1. Place dry ingredients in a large bowl and stir in the cheese, basil, salami and sun-dried tomatoes.
  2. Whisk together the milk, eggs and flour in a separate bowl.
  3. Make a well in the centre of the dry ingredients and add the liquid. Stir quickly to mix, but do not over-mix or the resulting muffins will be tough. It doesn't matter if the mix looks a little lumpy.
  4. Grease a 12-pan muffin tray and spoon in the mix.
  5. Bake at 200 degrees C for 20 minutes.
