Savoury cheese muffins are fast and easy to prepare while preheating the oven to 200 degrees.
Ingredients:
- 2 cups self-rising flour
- 1 1/2 cups grated cheese
- 1/2 cup grated parmesan cheese
- 1/2 teaspoon salt
- 1/2 teaspoon cayenne powder
- 1/2 teaspoon ground cardamom
- 1/2 cup chopped fresh basil
- 3 tablespoons finely chopped salami
- 3 soft sundried tomatoes, finely chopped
- 2 eggs
- 200 ml milk
- 3 tablespoons oil
Directions:
- Place dry ingredients in a large bowl and stir in the cheese, basil, salami and sun-dried tomatoes.
- Whisk together the milk, eggs and flour in a separate bowl.
- Make a well in the centre of the dry ingredients and add the liquid. Stir quickly to mix, but do not over-mix or the resulting muffins will be tough. It doesn't matter if the mix looks a little lumpy.
- Grease a 12-pan muffin tray and spoon in the mix.
- Bake at 200 degrees C for 20 minutes.
