Happy 2001! This year, make it a resolution to get your kids in the kitchen cooking! Soup is an easy dish that kids love to eat, and to make.

Creamy Chicken Vegetable Soup is a versatile recipe that can be adapted to any child's tastes. Younger children can help by pouring the canned soups into the pot, while older children can chop the onion and shred the cheese -- with supervision, of course!

Creamy Chicken Vegetable Soup

2 cups shredded, cooked chicken
2 cans (10 ounces each) cream of potato soup
2 soup cans milk
1 package (10 ounces) frozen vegetable of choice (corn, green beans, green peas, and spinach work well)
3 green onions, chopped
1/2 cup shredded cheese of choice (cheddar, Swiss, Monterey Jack or Co-Jack work well)

Combine the soups, milk, chicken, and vegetables in a large soup pot. Bring to boil, reduce heat, and simmer about 10 minutes. Ladle into soup bowls and top with green onions and cheese. Enjoy!
