Valentine's Day!

Valentine's Day is the perfect time to get in the kitchen and make something with your kids. Children love Valentine's Day. Red and pink. Hearts and Cupids. Candy and Chocolate. Can you blame them?

Here are a few wonderful recipes to make with your child!

Strawberry Salsa
Strawberry Salsa? Though it sounds a bit odd, it is actually delicious!

1 pint fresh strawberries, diced
3 small tomatoes, seeded and diced
1 small onion, diced fine
1 jalapeno, optional if making for kids
Juice of 1 lime
2 garlic cloves, minced
1 tablespoon oil

Combine everything in a bowl and chill for at least 2 hours before serving. Serve with tortilla chips.

Cinnamon Popcorn
Delicious!

8 quarts popped popcorn
1 cup margarine
1/2 cup corn syrup
1 package Red Hot candies

In a saucepan combine the margarine, corn syrup and candies. Bring to a boil and cook for 5 minutes, stirring constantly. (Parents should do this!) Pour this mixture over the popcorn and mix well. Pour the popcorn onto greased cookie sheets and bake at 250 degrees F for about 1 hour. Cool and break into pieces.

Glazed Fruit Salad
A healthy alternative on Valentine's Day!

1 quart fresh strawberries, halved
1 can (20 ounces) pineapple chunks, drained
1 apple, peeled and chopped
3 firm bananas, sliced
1 pouch (16 ounces) strawberry glaze

Mix everything together and chill until ready to serve.

Jell-O Jigglers

Make Jell-O Jigglers as directed on the package using either cherry, raspberry or strawberry flavor Jell-O. Cut out hearts using a heart-shaped cookie cutter. Serve with whipped cream for a fun Valentine's Day snack.

I love the first recipe. For me, combining fruit with hot peppers is nothing unusual. I add hot peppers to everything, including my herb teas. That is the reason why I no longer need to wear mitten ...
