Have you ever read the title of a recipe and said, "Yum! That sounds good!" You can't wait to try it. Then, you start to read over the ingredients. And you read. And you read. The list of ingredients is longer than your whole grocery list! And why is there an asterisk beside one of them? This ingredient can only be found at specialized stores in the lower Mississippi Valley between October 1 and October 25? What?

Italian Flank Steak
2 envelopes Italian salad dressing mix
2 tablespoons vegetable oil
1 flank steak, about 1 pound
Combine oil and dressing mix in plastic resealable bag. Add steak and shake to coat. Refrigerate at least 2 hours or overnight. Grill or broil until desired doneness.
Alfredo Noodles with Beef
1 jar Alfredo sauce
1 pound ground beef
1 pkg. spaghetti
Cook spaghetti according to package directions. Brown ground beef and drain off fat. Add the Alfredo sauce and heat through. Pour over spaghetti noodles and toss to coat.
Sausage Ring
1 pound bulk pork sausage
2 tubes (12 oz. each) refrigerated biscuits
8 oz. Monterey Jack cheese, grated
Cook sausage and drain off fat. Set aside. Flatten biscuits into 3-inch circles. Press half of the biscuits on the bottom and up the sides of a greased 10-inch tube pan. Spoon sausage over. Sprinkle cheese over sausage. Top with remaining flattened biscuits. Bake at 350 for about 25 minutes. Let stand 10 before inverting on serving plate.
Carrot Hashbrowns
3 potatoes, peeled and grated
3 carrots, peeled and grated
1 tablespoon oil
Combine potatoes and carrots in medium bowl and mix well. Salt and pepper to taste. Heat oil in skillet. Dump in potato mixture and form into a large pancake. Cook until browned on one side, and then flip over and repeat. To serve, cut into wedges. Served plain, with applesauce, or with sour cream.
Mushroom Potatoes
1 can cream of mushroom soup
½ cup milk
4 medium cooked potatoes, peeled and diced
Combine ingredients and pour into a lightly greased casserole. Bake, uncovered, at 350 degrees for about 30 minutes.
