Mother's Day Blueberry Breakfast Cake

Mother's Day is a day that we honor our mothers for all that they do for us through the year. It's a time when we give her the day off, buy her flowers, candy or a gift that we know she'd like. Many mothers prefer homemade gifts that their children have made themselves. So, if you don't have that special card made, it's time to get to work. But first, let's take a look at a recipe that will allow you an adult to make Mom a super delicious breakfast cake.

What you will need:

1/2 cup flour

11/2 cups cornmeal

2 egg whites

1 teaspoon baking powder

11/2 cups milk

1/2 cup apple juice

1 cup blueberries

1 teaspoon olive oil

(If Mom doesn't like blueberries, substitute for strawberries or raspberries)

What to do:

Preheat oven to 425 degrees F.

In medium bowl mix baking powder, cornmeal and flour.

In a larger mixing bowl, beat the egg whites until they are nice a fluffy.

In a separate bowl, mix apple juice, oil and milk.

Fold egg whites into the liquid mixture.

Stir into dry ingredients.

Pour batter into an oiled cake pan.

Sprinkle the top with the blueberries or whatever fruit you have chosen.

Bake for 30 - 40 minutes or until a toothpick inserted into the center of the cake comes out clean.

Serve the cake with butter, pure maple syrup and Mom's favorite cup of tea.

Enjoy the rest of the day with Mom. Rememeber, it is her special day, so let her choose what she'd like to do with you and the rest of the family. Some suggestions are take in a movie, go to a garden show, go out for dinner so Mom doesn't have to cook, or get Dad or another adult to do the cooking.

Have fun with Mom and don't let her do any work on Mother's Day.

Things to do for Mom on Mother's Day

1. Wash the dishes while Mom reads a favorite book.

2. Take out the garbage so Mom doesn't have to do it.

3.Make Mom something special to eat, such as this blueberry cake.

4. Do anything that Mom asks without protest. After all, this is her day. Make her happy.
