Party Recipes for Diabetic Kids

If you are diabetic, you know how important it is not to eat things that contain sugar. Don't let this spoil your party. Here are some delicious recipes that are especially for kids with diabetes.

Orange Cake

What you will need:

1/3 cup low fat margarine, melted

1/4 cup brown sugar substitute

1 egg

11/4 cups flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon cinnamon

3/4 cup freshly squeezed orange juice with no sugar added

Oven preheated to 350 degrees

What to do:

Combine egg, margarine and sugar substitute.

Beat at high speed with an electric mixer for 2 minutes.

Combine flour, baking soda, baking powder and cinnamon.

Add flour mixture to creamed mixture, alternating with the orange juice.

When well mixed, pour into an 9 inch non-stick cake pan.

Place in preheated oven and bake for approximately 30 minutes or until a knife inserted into the middle comes out clean.

This recipe can be doubled to make a round or square layer cake.

Remember, when using knives and stoves you will need adult supervision.


Chocolate Frosting

What you will need:

1 small container of light Dream Whip or other sugar free whipped cream.

1/2 cup skimmed milk.

1/2 teaspoon vanilla extract.

1 package of sugar free chocolate pudding.

What to do:

Blend milk, vanilla, and Dream Whip. Beat with electric mixer until peaks will form.

Add pudding.

Continue to mix for 1 minute or until the frosting is fluffy.

When using electrical appliances, adult supervision is recommended.


Root Beer Float

What you will need:

6 ounces diet root beer

1/3 cup frozen vanilla yogurt, sugar free

What to do:

Put one scoop of frozen yogurt into a frosted glass or glass mug.

Carefully pour root beer over it. Add a fresh cherry if they are in season and insert a colored straw. Serve and enjoy!


Ants on a Log

What you will need:

1 large stalk celery

3 tablespoons light cream cheese

12 dark raisins

What to do:

Fill the celery stalk with cream cheese. Add raisins. Cut into 3 inch pieces and serve.

* If serving more than 4 kids, you will need to double or triple this recipe.


Chocolate Popcorn

What you will need:

4 cups of microwave popcorn, popped

Butter flavored cooking spray

12 tablespoons of sugar free cocoa (May be sweetened with sugar substitute to make it more tasty.)

4 teaspoons cinnamon

What to do:

Divide hot popcorn in half.

Place in a brown bag while still hot.

Spray with butter flavored cooking spray and shake well.

In a bowl, mix 6 tablespoons of cocoa and 2 tablespoons of cinnamon.

Sprinkle over popcorn and shake well.

Follow these instructions with the other half of the popcorn.
