I am looking forward to a great > harvest. > > > Sincerely, > > Tom Tom, The Hungarian wax will turn yellow when ripe..the Jalapeno gets red and develops 'Cracks' on its shoulders when ripe. The others all start green and will turn red or Gold/yellow when ripe. When you cut them open the seeds should be fully mature. Keep in mind Chiles are good too when green so you can't really go wrong when you harvest them. Enjoy! Pepper Joe p.s.
