mixed together without the lumps. Pour about 2 tbs. of this mixture
over the crabmeat/breadcrumbs and with a fork mix together until the
crabmeat is coated with the breadcrumbs and mixture. Add the salt and
pepper to taste and top off with old bay seasoning, just enough to coat
the top of the crabcake. Spray a pan with pam or lightly coat with
cooking oil and with a spatula place the crabcakes gently on the pan.
Keep in mind this is a loose mixture because there is not a lot of
filler to bind it together. Broil in a pre-heated oven at 400 degrees
for about 1/2 hour or until the crabcake starts to slightly darken.
Gently remove with a spatula to serve. You can serve with lemon wedges
to squeeze on top. I made some last week with fried oysters first as an
appetizer and served with white wine. Superb! Bon Apetit'.
