Heat Up Your Breads With Chiles!

Nothing is better than a good, HOT bread to go with summer vegetables. Then in the fall and winter, spicy breads are great with chili, stews, soups, etc. to help warm you up on a cold day. Here are some recipes to try.

Chile Cheese Cornbread Muffins
  • 1cup cornmeal (blue or yellow)
  • 1 cup flour
  • 1/4 cup sugar
  • 1 T. baking powder
  • 1 t. salt
  • 1 egg, beaten
  • 1 cup milk
  • 1-1/2 T. butter
  • 1/2 to 1 onion, diced
  • 1/4 cup poppy seeds
  • 1 can diced chiles, or fresh
  • 1/4 lb cheddar cheese, shredded

Melt butter in pan, add onions and saute until nicely brown. Take off head, add poppy seeds. In bowl combine dry ingredients and cheese and chiles. Combine egg and milk and add to dry stuff. Beat until mixed. Add onions and poppy seeds. Put into 12 muffin papers and bake at 400 degrees for 15-20 minutes or until brown. Additional cheese can placed on top of muffins if desired.

Caribbean Habanero Cornbread
Recipe from Sunset Mag. April 98

  • 1 Cup yellow cornmeal
  • 1 Cup flour, all-purpose
  • 1 Tablespoon sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 Cup Salad oil
  • 1 Large Egg
  • 1 Can creamed corn - (8 1/2 oz)
  • 1/2 Cup plain low-fat yogurt
  • 1/2 Cup monterey jack cheese - shredded
  • 2 tablespoons Habanero chiles - minced
  • 2 Tablespoons Anaheim chili pepper - minced

1. In a large bowl, stir to combine cornmeal, flour, sugar, baking powder, and salt.
2. Add oil, egg, corn, yogurt, cheese, habaneros, and Anaheims. Stir until ingredients are evenly moistened.
3. Pour batter into an oiled 8-inch square pan. Bake in a 375 F oven until bread is a golden brown and begins to pull from pan sides, 30-35 minutes.

Jim Campbell's SAVINA BREAD
Recipe By Jim Campbell

  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups white flour
  • 1/2 cup V8 or similar veggie juice
  • 1/2 cup water
  • 1 tsp salt
  • 1 1/2 tbls evaporated dried milk
  • 1 1/2 tbls brown sugar
  • 1 tbl honey or sorgham
  • 1 1/2 tsp fast rise auto bread yeast (2 tsp normal yeast)
  • 2 tbls butter
  • 2 ounces ground dried Red Savina (tm) Habanero - (or more/less)

Note: all wheat flour may be used, but not all white - the Savina (tm) seems to go good with wheat breads while white has too little flavor for it.

Heat liquid ingredients to about 100 F. Pour into bread machine cannister. Put in dry ingredients, yeast last. Set machine to desired finish. Done.

I'll leave it to individuals to try and figure out how to adapt this to their own
