with hot pepper if jelly is not very hot, or a combination of hot sauce and lime marmalade. (Microwave jelly or marmalade to soften a bit for mixing and spreading.)

Preheat oven to 375 degrees. Work crescent roll dough into thin circle large enough to completely wrap the Brie. Place Brie in center of dough circle. .) Fold dough over top of cheese, working it together. Brush edges with beaten egg to help seal.

Bake approximately 10 minutes, following directions on crescent roll package. Do not overbake, as cheese will run. Serve immediately with crackers.

PEANUT BUTTER FROM HELL

  • 1/2 cup creamy peanut butter
  • 1/4 cup peanut oil
  • 2 tablespoons dried onion bits
  • 1 clove crushed garlic or
  • 1/4 teaspoon garlic powder
  • 1 tablespoon sesame seeds
  • 1-1/2 teaspoon honey
  • 2 tablespoons lemon juice
  • 2 teaspoons soy sauce
  • 1/4 to 3/4 teaspoon ground red pepper, more is better!
  • 3 tablespoons hot water, optional

Blend in a small pot over low heat. Stir gently till bubbly don't burn the stuff. Then allow to cool and put in a small crock pot (the one you got left over from the school PTA cheese sale) By the way this stuff will keep almost forever! The best medium to serve this disguised taste bud screamer is on Wheat Thins by Nabisco or Triscut for the healthy nuts.

The really strange thing about this little trick is that it has three different things that happen. First is that your taste buds get the sweet from the honey. Second a mild taste of peanut butter. THEN **KABOOM** RED PEPPER! I'LL SWEAR THAT THIS WORKS! It should take from a count of eight to ten seconds for the grenade to go off and you oughta watch the faces of the UNSUSPECTED!

CHIPOTLE APPETIZER MEATBALLS

These spicy meatballs are a wonderful appetizer and, when served in a chafing dish, will hold for a long time. Simple to prepare, they can be made ahead of time and reheated before serving.

Sauce:

  • 1 medium onion, chopped
  • 4 garlic cloves, chopped
  • 1 tablespoon vegetable oil
  • 1 cup tomato sauce
  • 2 cups beef broth
  • 1/4 cup chipotles en adobo along with the sauce, stems removed

Meatballs:

  • 1 pound ground beef
  • 1 pound ground pork
  • ½ cup finely chopped onion
  • 1/4 cup finely chopped fresh cilantro
  • ½ cup bread crumbs
  • 1 egg, beaten
