Asian Chicken Salad
  • 1 lb skinless, boneless, BBQ chicken
  • 1 clove garlic, crushed
  • 2 Tbsp soy sauce
  • 2 Tbsp. white wine vinegar
  • 1 Tbsp Nam Pla (Fish Sauce)
  • 1 Tbsp fresh lime juice
  • ¼ cup chopped mint
  • ¼ cup chopped coriander
  • 1 cup peeled, seeded sliced cucumber
  • 1 small red onion, sliced
  • Mixed lettuce for serving

Combine with all salad ingredients and shred chicken.. Toss well, cover and refrigerate for 20 minutes. Serve on a bed of lettuce leaves with crust bread.

Great Garlic Chicken Pizza

  • Enough dough for one pizza
  • 2 heads of garlic, peeled and coarsely chopped
  • 2 tsp crushed dried chile pepper
  • 1/2 cup light soy sauce
  • 5 Tbsp honey
  • 1 1/2 cups rice wine vinegar
  • 3/4 cup light olive oil
  • 3 chicken breasts, skinned, boned and cut into 1 inch cubes

  • 2 cups Gruyère, grated
  • 1 cup mozzarella
  • 1/4 cup green (spring) onions chopped
Preheat the oven to 500°F

Combine the garlic, red pepper, soy sauce, honey and vinegar in a bowl and set aside.

Heat 1/4 cup of the olive oil in a sauté pan and sauté chicken until opaque on all sides. Remove with a slotted spoon and set aside. Pour the garlic mixture into the pan and cook over a medium heat, stirring frequently, until the sauce is reduced to the consistency of syrup about 20 mins.

Return the chicken to the pan and cook, stirring constantly, until the pieces are completely glazed. Remove from the heat and set aside.

Shape the dough into your preferred shape. Brush the dough with olive oil then top with a layer each of the cheeses and the chicken. Leave a border around the edge for the dough to rise more. Sprinkle with the green onions and drizzle with a little more oil. Transfer the pizza to a preheated stone or tile and cook for about 12 mins. Remove from oven. andserve immediately.

Spicy Baked Catfish

  • 1 ½ lb cat fish fillets, skinned
  • 1 tsp minced garlic
  • 2 Tbsp olive oil
  • 1 tsp ground coriander
  • 1 yellow onion, thinly sliced
  • ½ cup plain yogurt
  • 3 jalapeño peppers, seeded and minced
  • 2 Tsp fresh ginger, minced
  • ¼ cup cucumbers, deseeded, peeled and sliced thinly
Preheat oven to 400°F

Lay fish in a shallow baking dish, overlap any thin sections. Brush with 1 Tbsp of olive oil.

Mix yogurt and cucumbers and set aside.

Heat remaining oil in a frying pan, sauté onion, peppers, ginger and garlic until onion is soft, about 4 min.; stir in coriander. Sprinkle mixture over fish and bake in oven until fish is cooked,
