Halloween Treats All Day

If you're like me, a few hours of trick or treating just isn't enough on Halloween. I like to spread the treats through out the day. This year's menu is tasty and tempting. Try one, two or the all of these yummy recipes.

Breakfast

MENU:

Apple flapjacks Orange Julius' Cinnamon and sugar toast

Apple Flapjacks

You need:
2 cups sifted flour
5 teaspoons baking powder
2 teaspoons salt
3 tablespoons sugar
1-teaspoon cinnamon
2 cups milk (whole or buttermilk)
6 tablespoons vegetable oil
2 beaten eggs
1 cup finely chopped, unpeeled, apples

Sift dry ingredients with a whisk. In a separate bowel, add milk, oil, and eggs. Add the dry ingredients and beat until smooth. Fold in apples.
Heat a heavy frying pan slowly until moderately hot. Test the temperature by sprinkling a few drops of water on the pan. If it sizzles, it's ready.
Grease pan very lightly before cooking. Pour approximately ¼ cup batter on to the pan, for each flapjack. Turn when top is bubbly and the edges are dry. Cook other side until golden brown. Top with butter and your choice of syrup.

Makes 2 ½ dozen 4 to 5" flapjacks.

Orange Julius'

You Need: (per 2 serving)
1 cup Orange Juice
1 cup water
¼ cup egg substitute
¾ teaspoon vanilla extract
¼ cup sugar
1 heaping cup ice

Combine all ingredients in a blender, set on high for 15-30 seconds.

Cinnamon and Sugar Toast

You need:
Hot toast
Butter
Cinnamon and Sugar mix

Simply butter your toast then sprinkle with the cinnamon and sugar mix. YUM!

Now we move on to Lunch. At home to take to school or work, this is a fun lunch idea.

MENU:

Cutout sandwiches Buggy desert

You need:
Sandwich bread, crusts cut off
Sandwich makings
Cookie cutters (Halloween type)
Gummy worms and bugs

Make your sandwiches, and cut out Halloween shapes. If you don't have Halloween cookie cutters, cut round sandwiches. Paint on a jack o lantern face with food coloring.
The gummy yummies are your gross desert.

Now for a festive, light, and delicious dinner.

MENU

Pretty Tasty Pumpkin Soup

You need:
2 tablespoons butter
¼ cup chopped green pepper
2 tablespoons chopped white onion
1 large sprig parsley, or 1 tablespoon dried parsley
1/8 teaspoon (a pinch) Thyme
1 Bay leaf
1 8oz. can tomatoes
1 1lb. can pumpkin
2 cups chicken broth or stock
1-tablespoon flour
1-cup milk
1-teaspoon salt
Pinch black pepper

Melt the butter in a large saucepan. Add green pepper, onion, and herbs. Cook for 5 minutes. Add tomatoes, pumpkin and chicken broth. Mix well, cover and cook on medium low heat 30 minutes, stirring occasionally. Press mixture through a food mill or wire strainer.
