Wake up your salads with home grown fresh herb dressings! Nothing could be better; that is unless you grew all the salad ingredients in your garden! Start out with fresh greens. Break out of the iceberg lettuce tradition and try some romaine or other leaf lettuce. Add some arugula or radicchio to that. Slice in other choice vegetables. Try adding edible flowers. Nasturtiums have a spicy flavor while borage flowers taste like cucumbers. Make your dressings with fresh herbs whenever possible for the best flavors. Be creative and try different herbal combinations. Here are some recipes to get you started: Herb and Yogurt Dressing Ingredients: 1 cup plain yogurt, ½ cup olive oil, ½ cup tarragon vinegar, salt, pepper, 2 tablespoons (total) minced fresh chives, dill, lemon balm, parsley, sage, spearmint, to taste; few drops of maple syrup. Shake yogurt, oil and vinegar together in a jar. Add salt, pepper, minced herbs, and maple syrup. Shake again before serving Minced Herb Dressing Ingredients: 1 teaspoon each minced parsley, basil, thyme, savory and marjoram; ¼ cup olive oil, ¼ cup vinegar. Shake ingredients in a jar. Let stand thirty minutes before serving. Herb Mayonnaise Stir in 1 teaspoon fresh minced basil or dill to 1 cup mayonnaise (store bought or your own).
