Keep the Harvest Going

Take advantage of the season's intense growth by preserving enough herbs for yourself and for friends. It's easy with an organized routine.

Harvest Kit

Grouping supplies together makes the harvesting chore take only a few minutes.

Supplies:

herb drying racks (click here for an easy one)
pruners
rubber bands
small paper strips for labeling
good-sized tray
paper towels
quart freezer bags with labels

Harvesting and Drying

After clipping fresh herbs from the garden, rinse them off, group them into bunches and wrap with a rubber band. Attach a label and hang on a drying rack. This should take no more than five to ten minutes, and could be done in the morning before going to work. After a couple of weeks, most herbs are dry.

Processing For processing herbal harvests, set out a tray lined with a fresh paper towel. Place dried herbs on the towel and being separating the leaves from stems, keeping the leaves as whole as possible. This keeps the herbal oils from releasing, thereby preserving their strength. When done, discard stems in the compost or time in bundles and save for an aromatic addition to the fireplace. Place the herb in a labeled quart freezer bag. By using freezer bags, the burden of finding enough or bigger jars for all of the herbs is lifted. Once the harvest is complete, herbs can be transferred to decorative jars.
