911 Emergency Dinner!

Emergency Dinner

This "recipe" (if you could call it that) is a true, timesaving gift. By making this for supper, I have avoided many a drive-thru. Here you go:

Bean and Rice Bowl

Uncle Ben's instant brown rice 1 can black beans

Make rice, per instructions on box. In the meantime, heat beans from the can. When all is done (5 minutes, tops) Put rice in bowl, top with beans.

Serve with preshredded, low-fat cheddar cheese, salsa and either low-fat or nonfat sour cream. If you really want to knock yourself out, warm a tortilla in the microwave for about 10 seconds. (my kids call these "pushers" because the tortillas help "push" the beans and rice on to their forks)

This is a good, nutritious meal and the kids love it! You could use instant white rice if you wanted, but the brown is really quite good and so much better for you!

Great article, and a recipe I've used hundreds of times! It's a lot like fish-sticks (almost all kids love them) but better for us. ...
