If you love spicy ethnic food, you must love Thai food. Thai Noodle is especially tasty stuff and good for you, too. You may have to scout out an ethnic market for some of the ingredients, but well-stocked groceries in more urban areas usually have this stuff on the shelves in the ethnic aisle.
While the list of ingredients may look terribly intimidating, don't let you that stop you from making this delightful dish! Once everything is chopped and diced, it just takes a second to put together. 1/2 pound soba noodles 1 pound skinless, boneless chicken breasts 2 shakes of soy sauce 1 small green bell pepper, seeded, deribbed & sliced 1 red bell pepper, seeded, deribbed & sliced 1 carrot, grated 10 mushrooms, sliced 1 onion, chopped 4 cloves garlic, minced 2 tablespoon minced fresh ginger root 1 1/2 tablespoons red chile sauce 3/4 cup peanut sauce 2 tablespoons oyster sauce 1 tablespoon sesame oil, 1 teaspoon safflower oil, mixed 1 tablespoon sesame seeds * Cook soba noodles according to package directions. * Slice chicken breasts into strips. Marinate in soy sauce, half the garlic and half the ginger for about 1/2 hour. * In a large saucepan or wok, heat sesame oil/safflower oil blend over medium heat. Cook chicken until no longer pink. Add garlic, ginger, and onions; cook until onions are tender. Add mushrooms and cook until mushrooms are tender. Add peppers, carrot, peanut sauce, oyster sauce, and hot chili pepper sauce. Heat through. * Toss cooked soba noodles with sauce. Garnish with sesame seeds. Go To Page: 1
