Fast and Spicy!* Exported from MasterCook * Not only can you whip this incredibly tasty meal out in no time, you'll love the fact that you have all the flavor, very little fat and and no hard to find ingredients! While this may taste exotic, you probably have everything right there in your kitchen or pantry. The fresh gingerroot is available in most supermarket grocery stores. It's that alien looking root mass by the mushrooms and snow peas. I store mine in the freezer and grate what I need. Fresh is awesome! Spicy Peachy Chicken Serves 4 1 (12 ounce) jar peach conserves (no sugar) 1 tablespoon orange juice concentrate 1 teaspoon grated gingerroot 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/4 teaspoon salt 4 skinless boneless chicken breast halves Mix all ingredients except chicken in shallow nonmetal dish or heavy-duty resealable plastic bag. Add chicken, turning to coat with marinade. Cover dish or seal bag and refrigerate 2 to 4 hours, turning chicken occasionally. Heat coals or gas grill. (or try out your George Foreman-type grill on the counter) Remove chicken from marinade; reserve marinade. Place chicken on grill; brush with half of the marinade. Cover and grill 5 to 6 inches from medium heat 15 to 20 minutes, turning once and brushing with remaining marinade, until juice of chicken is no longer pink when centers of thickest pieces are cut. If desired, heat remaining marinade to boiling. Boil at least 2 minutes to avoid food poisoning! Serve with chicken.
