With Valentine's Day right around the corner, how about a heart healthy recipe that not only delivers the goods nutritionally, but packs some punch in the flavor department, too.

This recipe, adapted from Betty Crocker's Best of Healthy and Hearty Cooking, has everything you're looking for! Enjoy! Spicy Curried Chicken on Cous Cous

4 small skinless boneless chicken breast halves 3 teaspoons olive oil salt and pepper to taste 1/8 teaspoon ground red pepper (cayenne) 1 cup chopped peeled green apple 1/2 cup chopped onion 2 cloves garlic -- finely chopped 2 teaspoons curry powder 1/2 cup chicken broth 2 cups hot cooked whole wheat cous cous OR SUBSTITUTE 2 cups hot cooked brown rice

Remove excess fat from chicken; cut chicken into 1-inch pieces. Heat 2 teaspoons of the oil in 10-inch nonstick skillet until hot. Cook and stir chicken, salt and red pepper in oil over medium heat until chicken is done, about 5 minutes; remove chicken. Add remaining 1 teaspoon oil, the apple, onion, garlic, curry powder; cook and stir until apple is tender, about 7 minutes.

Stir in chicken broth. Heat to boiling, stirring constantly. Serve over couscous.
