Turkey--The Ultimate LeftoverThis recipe is sure to become a perennial favorite among those with half eaten turkeys languishing in their refrigerators. An especially important recipe if you're just plain tired of the same old turkey sandwiches. So whether you have a turkey lurking in your fridge or a chicken, this great sandwich is made from leftovers: turkey OR chicken. Not only will you enjoy this delicious sandwich, you will love how easy and nutritionally balanced it is, too. Tasty Turkey Wraps 4 cups romaine lettuce -- shredded 4 tablespoons Parmesan cheese -- freshly grated 4 chopped green onions 2 tablespoons vinaigrette: homemade or store bought 4 8" whole wheat flour tortillas 2 cups chopped turkey or chicken 8 marinated sun-dried tomatoes -- drained Fresh grated pepper -- to taste In medium bowl, combine lettuce, cheese, green onion and salad dressing. Arrange 1 cup mixture over each of the 4 tortillas. Top each with 1/4 cup chopped turkey or chicken, 2 sun-dried tomatoes and pepper to taste. Fold in bottom and top portions. Roll up from side to completely enclose filling. Yield:4 Wraps Per serving: 345 Calories (kcal); 14g Total Fat; (37% calories from fat); 21g Protein; 32g Carbohydrate; 27mg Cholesterol; 1313mg Sodium
