Avocado--A Good and Healthy Fat

Avocados have been given the nutritional shaft for their high fat content. But that fat is good fat and if you don't eat too much, can help you get a good portion of EFA's (Essential Fatty Acids).

This is the stuff that will keep your skin pretty, your hair shiny and the rest of your body lubed up. A good thing can turn ugly if you eat too much, though and could give you another size up in the pants department!

Here is a terrific recipe to try when you want a little good fat in your diet:

Guacamole

2 or 3 avocados -- mashed 1/2 tablespoon lemon juice 2 tomatoes -- peeled and chopped 1 cup minced red onions 1 teaspoon sea salt 1 tablespoon chopped green chili peppers, seeded 3 tablespoons chopped fresh cilantro

Mash the ripe avocado, add lemon juice and blend. Peel, chop and drain the tomatoes. Add along with remaining ingredients to the avocado mixture; blend. Cover and let sit. It is better not chilled and served right away.

Serve over chicken enchiladas or as a sauce over any Mexican-style chicken, beef, or cheese dish. Also can be served with healthy baked tortilla chips as a dip. Can be kept in refrigerator up to 24 hours if covered very tightly, but isn't recommended. You lose a lot in flavor.
