In this recipe are two ingredients you will have to get from the health food store: whole wheat pastry flour and sucanat.
Whole wheat pastry flour is a soft wheat that is still whole wheat, but has the texture of talc and is very appropriate for baked goods like cakes, pies, etc. You wouldn't use it with bread, though. Sucanat, which stands for SUgar CAne NATural, is evaporated sugar cane juice. (see discussion threads for more information) Sugar cane isn't bad--it's the processing that's the problem and sucanat is a viable alternative to white sugar. Enjoy this delicious recipe as you start to enjoy the cooler weather and fall! 2 small apples, Gala are good. 1 tablespoon butter 1/4 cup sucanat 2 tablespoons finely chopped walnuts 1 1/4 cups whole wheat pastry flour 1/3 cup old fashioned oats 1 teaspoon ground cinnamon 3/4 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon ground ginger 1/8 teaspoon salt 1/4 cup butter 2/3 cup sucanat 1 teaspoon vanilla 1 large egg 1/2 cup buttermilk Preheat oven to 350 degrees. Cut each apple in half lengthwise and peel. Cut 2 (1/4-inch-thick) slices from the cut side of each apple half to get 6 slices; set slices aside. Chop remaining apple to measure 1/2 cup; set aside. Coat bottom of a 9-inch round cake pan with melted butter. Sprinkle sucanat and walnuts over butter; set aside. Arrange the apple slices spokelike over the sucanat-walnut mixture, overlapping slightly; set aside. Combine flour and next 6 ingredients (flour through salt) in a bowl, and stir well. Set aside. Beat 1/4 cup butter and sucanat at medium speed of a mixer until well-blended. Add vanilla and egg, beating well. Add flour mixture to creamed mixture alternately with buttermilk, beginning and ending with flour mixture, and beat well after each addition. Stir in chopped apple. Pour batter over the apple slices. Bake at 350 degrees for 35 minutes or until a toothpick inserted in center comes out clean. Let cool in pan 5 minutes on a wire rack. Loosen cake from sides of pan, using a narrow metal spatula. Invert onto a cake plate; cut into wedges. Serve warm. Per serving: 292 Calories (kcal); 10g Total Fat; (28% calories from fat); 4g Protein; 48g Carbohydrate; 24mg Cholesterol; 259mg Sodium
