Millet can be prepared as a pudding, a great snack between meals, a side dish, a dessert and as a breakfast. Millet can also be ground into flour. It is excellent as a baby's first cereal to alternate with brown rice cerals. It is easily digested and has a very mild flavor.
3 Cups of cooked millet* 1 Carrot, grated fine 1 Onion, minced 1 Clove of garlic 1 Teaspoon of sesame oil 1/4 Cup whole grain bread crumbs 3 Tablespoons of roasted sesame seeds 1 Tablespoon of tamari soy sauce 1/4 Teaspoon of thyme or marjoram 1/2 Teaspoon of sage, rubbed 1/4 Cup of fresh minced parsley * 1 Cup of millet makes 3 Cups of cooked Pot-Boiled: 1 Cup of millet 3 Cups of water Pinch of sea salt Pressure Cooked 2 Cups of millet 5 Cups of water Pinch of sea salt Wash millet and drain in a strainer. For the fluffiest texture and best flavor, dry roast the millet in a skillet by stirring over medium heat until it smells toasty. Meanwhile, bring water to a boil. Add millet and salt, cover and simmer for 25 minutes. To pressure cook, place roasted millet and water in the cooker. Bring to pressure on high heat, then turn to simmer and cook for 25 minutes. Next comes the rest of the recipe! Lightly saute carrot(s), garlic clove(s), and onion(s) in oil. Cover and cook on low heat for 5 minutes. Mix in a large bowl with other ingredients. Fill lightly greased and floured loaf pans half way full. If too crumbly, add a little bit of water until the mixture holds together well. Bake at 375 F for approximately 45 minutes, or until the surface is crisp. The baking times will vary depending on your oven and if you added additional meat to your recipe. Personally, I add more parsley, onions, carrots, garlic, seasonings, and celery to this recipe. You can also add 1 cup each of squash, cauliflower, or cabbage. Whatever stuffs your bird!
