Smoked Salmon and Spinach Sushi

Sushi, a traditional Japanese dish, has been described as fresh, healthy and low in fat. Typically prepared with raw seafood and fresh fish and served with a dipping sauce, sushi can also be prepared with cooked seafood, tofu, vegetabes, and/or eggs. As a result, those who are not sold on the idea of eating raw fish may also enjoy sushi. With so many variety of sushi, the are many different ways of preparig this dish and, with the proper equipment, you can even prepare sushi in your very own kitchen!

Sushi equipment and utensils can be purchased at most Japanese specialty stores and may also be found in some Asian supermarkets. However, I prefer the use of "Sushi kits". Most come with everything that you'll need to prepare and serve sushi. This week I would like to my favorite non-traditional sushi recipe in which I have prepared. Some other ingredients that I have used are raw and cooked seafood and/or vegetables. I hope that you will find that this recipe delicious and easy to prepare.

Smoked Salmon and Spinach Rolls
wasabi paste
10 strips of smoked salmon
2 cups of baby spinach leaves, stems removed
2 cups of sushi rice
5 sheets of nori

Using one nori sheet, cut in half-lengthwise, then trim bottom from each sheet (follow this procedure for all remaining sheets; position sheet on edge of mat (north edge), leaving spacee on each side of sheet; place a nori sheet lengthwise on bamboo rolling mat, shiny side down; with moist hands take a small amount of rice and place on nori sheet and spread evenly over nori; take a dab of wasabi paste and spread evenly across center of rice; place spinach leaves across rice; place salmon on top of spinach; hold salmon in place and roll in bamboo mat (rolling away from you) and continue rolling until roll is closed; repeat rolling process to make sure that roll is secured; slice finished roll in half and cut twice, yeilding six pieces; continue the above process for remaining nori sheets and ingredients.
