Scallops with Orange Sauce

Having created many seafood dishes for nearly ten years, I have devloped a keen since of combining herbs and spices to create a wide range of flavorful sauces and marinades that enhances the flavor of many types of seafood dishes. But delicious as these combinations of herbs and spices are, let us not forget about the tropical flavors created when combining fresh fruit with herbs and vegetables and how equally well, if not more so, these flavorfulcombinations can be used as seafood sauces and marinades.

Fruit-based salsas and sauces are very easy to create. Using only your favorite fruits, herbs, vegetabes and spices, you are certain to create a recipe that you will want to use time and time again. Two of my favorite fruit-based seafood sauce and salsa recipes are published below. And as always, not only is it my sincere hopes that you will try them, but enjoy and share them as well. Scallops with Orange Sauce
1 pound of large sea scallops
1 tablespoon of olive oil, add more if needed
salt and pepper to taste

Rinse scallops and pat until dry; set aside; pour olive into heavy skillet and heat oil until very hot, almost smoking; add scallops to skillet and cook until golden brown on both sides; remove and drain on paper towel; set aside.

Orange Sauce
1/2 cup of orange juice
1/4 cup of white wine
3 tablespoons of butter
1 tablespoon of dillwed, dried

Pour orange and wine into sauce pan and cook over high heat until reduced by 1/3; and butter and herbs and coninue cooking until butter has completely dissolved.

Serving Suggestions: Spread sauce onto plate and arrange scallops on top or serve sauce and scallops over pasta.

Grilled Salmon with Pineapple and Cucumber Salsa
4 salmon filets, bones and skin removed
salt and peper to taste
non stick cooking spray

Season salmon on both sides and spray with cooking spray; grill on medium high coals for about 5-7 minutes, turning once halfway through cooking time; set aside.

Pineapple and Cucumber Salsa
1/4 cup of finely chopped cumber(not the seeded portion)
1/4 cup of finely chopped pineapple
1/4 cup of red onion, diced
1/4 cup of fresh cilantro, diced
1/2 cup of fresh lime juice

Combine all cucumber, pineapple, onion, cilantro into large bowl and toss with lime juice and refrigerate for about 2 hours. Serve over grilled salmon or any other type of seafood of your choice.
