Welcome to Gourmet Seafood!
This week's recipe features Sablefish. Sablefish is moist and has a unique, but delicious flavor and is tender in texture. It is harvested in the Gulf of Alaska and the Bering Sea and is sometimes referred to as black cod. It goes very well with most herbs and spices and pairs well with a wide variety of wines--so feel free to experiment and enjoy with your favrorite bottle of wine, if you so desire. I have prepared this dish serveral ways, but find this to be my favorite. I hope you enjoy it as well. Bon Appetit!
Citrus and Herb Grilled Sablefish
4 Alaska Sablefish fillets, thawed, if not fresh
1 large orange
3 tablespoons orange juice
1 tablespoons lemon juice
1 teaspoon of fresh rosemary
1/2 teaspoon of onion powder
1 teaspoon of oil
Salt and pepper,to taste
Non-stick cooking spray
Combine ingredients in medium bowl; brush on fish; spray with cooking spray and place on grill with medium heat coals; grill each side for about 3-4 minutes or until cooked to your liking; test fish for donness by checking to see if it flakes when pulled with a fork.
