Flounder with Root Vegetables

Hi!

Welcome to Gourmet Seafood. This week's recipe is not only nutritious and delicious, but very easy to prepare. It combines the delicate taste of flounder with autumn vegetables. I like to prepare this dish with flounder, but you can use any other type of white meat fish filet. My favorite vegetables to use are carrots, potatoes, celery, onions and a combination of herbs and spices. The recipe follows:

Flounder with Root Vegetables
8 flounder filets, skin and bones removed
2 cup of seafood broth
1 cup of zucchini, diced
1 cup of carrots, diced(br> 1/2 cup of cooked potates, diced
1/2 cup onion, diced
2 garlic gloves, finely minced
1/2 teaspoon of fresh parsley
1/2 teaspoon of fresh tarragon
1 tablespoon of fresh lemon juice
salt and pepper to taste

Brown fish in nonstick skillet; add broth, herbs and vegetables; bring to a boil; cover and cook over low heat until done, abot 15-20 minutes; serve immediately with toasted french bread and your favorite beverage.
