Spicy Grilled Snapper

It is time to celebrate the end of the summer and spend one more weekend at the beach, hit the highway to visit family and friends, or head outdoors to celebrate with the grill.

Spicy Grilled Red Snapper
4 snapper fillets
1/2 cup lime juice
2 tablespoons of vegetable oil
2 scallions, chopped
2 garlic cloves, minced
1 teaspoon fresh ginger, grated
2 teaspoon chopped cilantro
2 teaspoons cayenne pepper
1 teaspoon of cumin powder
2 tablespoons of honey
salt and pepper to taste

Place fish in shallow bowl; set aside; in a medium bowl, mix all ingredients, combining well; coat fish with half of mixture and refrigerate for about 20 mnutes, turning once; place fish on grill and cook for about 4-5 minutes; turn and coat with remaining mixture and grill an additional 5 minutes or until fish flakes easily when pulled with a fork.
