Salmon and Pasta Salad

Salmon is the featured ingredient in this week's recipe. I am always trying new ways to prepare salmon and have created some very delicious and easy recipes. The recipe I'd like to share this week consists of vegetables and seafood, tossed with capellini pasta. It is guranteed to please and is goes very well with warm garlic bread. The recipe is very easy and can be prepared during any day of the week. The recipe is printed below. Enjoy.

Salmon and Pasta Salad
1/2 pound cooked capellini pasta
1 large cooked salmon fillet, pin bones removed
1 cup of fresh steamed broccli florets
1/4 cup of white wine
2 cloves, finely minced garlic
1/4 cup of onions
2 tables of olive oil
1/4 cup black olives
1/4 cup cherry tomatoes, halved
salt and fresh ground pepper to taste
1 teaspoon of fresh basil, finely chopped
1/2 teaspoon lemon zest

Add olive to saucepan and heat over high heat; add onions and garlic; cook for about 1 minute; add olives, and remaining ingredients; remove and toss with pasta; serve warm or cold.
