Grilled Trout with Sauteed Almonds

This week's seafood catch, Trout, is very affordable, delicious and easy to find. The taste of this fish can be described as a cross between mild and strong. It's flavor is so mild that its naturual flavor can be easily overpowered if too much seasoning is added. But at the same time, using just the right spices and herbs can enhance and add to its naturual taste, producing a culinary seafood delight that is hard to match. The recipe below is easy to prepare and elegant enough to served to guests during any occasion.

Grilled Trout with Sauteed Almonds
2 trout fillets, skin on, bones removed
2 tablespoons lemon pepper seasoning
1 tablespoon butter
2-3 teaspoons sliced almonds
2 tablespoons olive oil
10 lemon slices
fresh parsley sprigs

Saute almonds in butter and set aside; place lemon slices in a oval shaped circular position around serving platter; set aside; sprinkle and generously rub both sides of fish with olive oil and lemon-pepper seasoning; place skin side down on medium hot grill and grill for about 3-minutes each side, turning only once; remove fish and place on top of lemon slices and garnish with parsley sprigs.

Serve with steamed asparagus or green beans.
