Cilantro-Lime Grilled Red Snapper

This week's seafood catch is Red Snapper. Red Snapper's sweet and mild taste, along with its firm texture, makes this a very versatile fish. It can be used in many different recipes and t can be cooked in almost any manner, except frying. My favorite and recommended way to prepare it and almost any type of fish is grilling, baking and/or broiling.

Grilling, baking and/or broiling marinated fish, and most seafood in general, is an excellent way to keep calories to a minimum while getting a lot of flavor. This week's recipe is a fine example, and I hope you enjoy it!

Cilantro-Lime Grilled Red Snapper
4 large snapper fillets
1 cup fresh lime juice
1/2 cup oil
1/4 cup honey
3 cloves of finely minced garlic
2 tablespoons of fresh cilantro, finely chopped
1 tablespoon of onion powder
1 teaspoon of lime zest
1/8 teaspoon red pepper flakes
salt to taste
non-stick cooking spray

Rinse fish and drain off excess water and place in a single layer inside of resealable plastic bag; set aside; Mix remaining ingredients in a medium bowl and pour into bag with fish; refrigerate for about 50 minutes, turning once after 25 minutes; remove fish from marinade and place on broiling pan coated with cooking spray; broil for approximately 10 minutes or until fish flakes easily with a fork. Do not over cook.
