Baked Lemon-Herb Halibut

Welcome!

As much as I love to cook, I must be honest and admit that by the end of the week, I want to spend as little time in the kitchen as possible. But, I do want to prepare a seafood dish that is delicious, healthy, (I indulge without guilt on Saturdays) easy to prepare, and very flavorful. Dried spices, fresh herbs, the use of marinades and a little creativity is what I often use in planning my end-of-the-week dinner menu and find. So before grilling, baking, roasting, broiling or sauteing your favorite seafood, experiement a little and share some of your creations with your Suite family and friends.

However, before using your favorite mearinades, be sure to be well informed about the type of seafood you are marinating, as some seafood break down very quickly in liquid marinades and will fall apart. This week's recipe is a perfect example of the flavors of a very flavorful seafood dish, using the techniques mentioned above. For a complete meal, serve with a salad, garlic bread, and a glass of white wine, or your favorite beverage.

Ingredients
4 halibut fillets
1 teaspoon fresh chopped parsley
1 teaspoon fresh chopped rosemary
1 teaspoon onion powder
1 teaspoon celery seed
1 teaspoon garlic powder
2 garlic cloves, finely minced
2 tablespoons fresh lemon juice
1 tablespoon grated lemon zest
4 whole rosemary sprigs (for garnish)
lemon wedges (for garnish)
fresh ground black pepper
salt to taste
lemon wedges(for garnish)

Instructions
Preheat oven to 400 degrees; pour garlic powder, garlic cloves, rosemary, salt and pepper, place fish fillets into a medium sized bowl and sprinkle with salt, onion powder, celery seed, garlic, lemon zest, onion powder, celery seed, salt and pepper onto a large plate and mix together with a fork, spreading evenly over plate; place fish fillets on top of mixture and coat evenly; spray baking dish with non-stick cooking oil; place fish in single layer; bake uncovered until fish flakes easily with a fork; sprinkle with lemon juice before serving; garnish with lemon wedges.
