Baked Lemon Shrimp with Garlic

I have always ejoyed the culinary pleasure of dinning out at fine restaurants that specialize in gourmet seafood dishes. However, I find that dining out can be expensive and have opted for the next best thing...preparing my favorite seafood delicacies at home. Elegant and easy seafood dishes can be prepared in your own home simply by researching the internet, cookbooks, getting recipes from familiy and friends, etc., and experimenting with a variety of herbs, spices, and fresh seafood. Cooking with shrimp illustrates the versality of this particular seafood, as the possibilities for creating the perfect menu is evident, since there is no wrong way to prepare it as long as the shrimp is not overcooked. When I am looking for a great gourmet seafood dish that is sure to impress, I turn to Food TV Network, the website of the celebrity chefs. There's tons of recipes in which to choose. Most of the dishes on the Food TV site calls are very easy to prepare, but you must have a well stocked pantry, as many call for lots of ingredients. But the end results are certainly worth it! However, the first recipe, Baked Lemon Garlic Shrimp, that I wish to share is very easy to prepare, calls for very few ingredients and will satisfy even the most discriminating pallate. BAKED LEMON GARLIC SHRIMP

****************************************************************

2 pounds large shrimp (about 30), peeled
2 sticks (1 cup) unsalted butter
1 1/2 teaspoons salt, or to tast
1 tablespoon minced garlic, or to taste
1/2 cup flat-leafed parsley leaves, washed well, spun dry, and chopped fine
2 tablespoons freshly grated lemon zest (from about 2 large lemons)

COOKING INSTRUCTIONS

Preheat overn to 450 degrees; in a flameproof baking dish large enough to hold shrimp in one layer melt butter with salt over moderately low heat; stir in garlic and half of parsley; add shrimp and bake 5 minutes; turn shrimp and sprinkle with remaining parsley, zest, and lemon juice; bake shrimp until just cooked through, 5 to 10 minutes more.

Serve shrimp with rice and lemon wedges.
