As an international food writer, it's not always easy to impress me. But Hinako at the Four Seasons in Berlin has completely overwhelmed me.
I arrived in my room late one night after a very busy day to find a true masterpiece of international cuisine - an incredibly artistic sushi dessert tray that surely would win awards in any culinary - or artistic - competition. What a clever idea to take the sushi concept and apply it to dessert. Each little bite-sized bundle was made with sweetened rice and topped with mini pieces of fruit, strawberry, blueberries, and kiwi, and all were angled in a decorative pattern on a rectangular mini presentation platform. Two small dipping sauces of raspberry and mango in mini Oriental blue and white pottery bowls rested nearby. To complete the motif, Chef Hinako had lined the decorative tray with light brown demerara sugar to simulate the sand the Japanese rake into artistic patterns. The fruit sushi fooled the eye and delighted the palate, and, even though I wasn't really hungry, it was so beautiful that it tempted me to break open the package of chopsticks and sample this culinary artwork. It tasted just as good as it looked. This fruit sushi was incredibly innovative, stylish, decadently delicious, and yet relatively healthy. It was a most pleasant and appreciated treat to come "home" to at the end of a full day. With this type of talent, Four Seasons Chef Hinako will go far. This stylish cuisine is typical of a new wave of innovative international cuisine that you'll find quietly coming to the front in Germany. Go To Page: 1
