Wrap Up a International Treat


Culinary trends come and go, but, wrappers, seem to have found a permanent place on the food scene. These innovative edibles let us enjoy delicious taste with our on-the-go lifestyle. But just what is a wrap or wrapper? The answer to that depends on who makes it. Basically, a wrapper is a flat bread, such as a tortilla, or a lavash that's wrapped around (appropriately enough) a filling and comes wrapped in aluminum foil or foil-covered paper, which helps keep the contents warm.

Wraps are especially popular because they can hold a stuffing. Try eating a sandwich with lamb, rice, and beans and you've got an incredible mess. Tuck these same ingredients in a wrapper, especially one that's then been wrapped with foil, and you can enjoy a hand-held meal that's not going to spill out over your suit jacket.

A wrap can be as simple as the quick meal you assemble from grocery store ingredients. It can also be a showcase for a chef's creative genius.

Although other breads are used to create wraps, tortillas seem to be the favorite. And, if you thought that tortillas were just for Mexican food - or that they were bland, then you haven't tasted tortillas from the Folsom-California-based Santa Fe Trading Company, operated by the Madrid family since 1983.

Whether it's Hot Habanero Chili, Black Bean and Garlic, Tomato-Basil or Eight-Grain tortillas, they're a far cry from the basic ones we've been served for years. With Santa Fe's Chocolate, Wild Berry and Pumpkin tortillas, wrappers can even be served for dessert.

Here, so you can get started making your own wraps, are a couple of their recipes for quick and easy wraps.

Breakfast Wrap - Sauté bell peppers and onions. Add scrambled eggs and diced green chili. Top with melted cheese and salsa, and wrap into a bacon or chorizo tortilla.

Avocado Wrap - On a black bean and garlic, tomato-basil or spinach tortilla, place a bed of romaine lettuce. Top with avocado wedges, cream cheese, alfalfa sprouts, tomato, and red onion rings. Top with ranch dressing and wrap.

Ultimate Veggie Wrap - On a tomato-basil, spinach, or 8-grain wheat tortilla, place black beans and rice. Add lettuce, diced tomatoes, onions, cilantro, black olives, salsa, bell peppers, guacamole and sour cream and wrap up.
