I absolutely love living in rural Virginia, where I'm surrounded by trees, birds, chipmunks and, of course, squirrels. But, after living in the metropolitan Washington, D.C. area, where I had my choice of ethnic restaurants, I am still having withdrawal symptoms. While we do have some outstanding restaurants in the area, there are not as many as before, there's not as much ethnic variety -- and it's a long drive. As a result, I find myself gravitating to cooking more ethnic recipes at home. But, like everyone else, I don't have a lot of time, nor do I want to take a lot of time to cook. There are many other things that I want to do as well - from playing with my dogs and enjoying nature to playing the violin. Yet I want to eat well. So, when I find a recipe such as this Short-Cut Paella, from the McCormick® Company, I'm delighted. In addition to reminding me of the classic Spanish Paella, it's easy to prepare-and it's a one-dish meal that makes cooking it even simpler. The secret to this recipe, of course, is its subtle, yet tangy seasoning, created by combining McCormick® Italian Season, pepper, and ground Turmeric. The Turmeric also gives the dish a rich golden color and is a lot less expensive than saffron. Turmeric, McCormick home economists say, has been known throughout history for its use as a natural colorant in cosmetics and textiles, but, today, it is also used to give a golden color to rice dishes, sauces, soups, stews and home canning recipes. "But turmeric has much more to offer than just a pretty color," they point out, "and as Americans' tastes continue to explore the cuisines of the Far and Middle East, we are beginning to take note of turmeric's flavor as well. It has a mild aroma and a warm earthy flavor, with hints of ginger and pepper. It adds complexity to a variety of dishes, and is best combined with other flavors, rather than just used by itself." So here, to help you discover, or rediscover, the flavor of turmeric, and enjoy a quick easy dish that's still festive, is McCormick's recipe for Short-Cut Paella. Short-Cut Paella Ingredients: 1 tablespoon olive oil 1/2 cup chopped onion ½ pound smoked sausage or chorizo, cut in lengthwise in half, then into ¼-inch slices 1 cup long-grain rice, uncooked 2 tablespoons McCormick® Italian Seasoning ½ teaspoon McCormick® Ground Turmeric 2 cups chicken broth 1 14 ½-ounce can diced tomatoes, drained
