Perfect for trick-or-treaters of any age, apples dipped in anything from caramel to chocolate are cheerful treats, perfect for Halloween. These remind me of old-fashioned state fairs: the smell of cotton candy and funnel cakes, the crisp air and soulful feel of fall.
Start with the crispest, freshest apples you can find, the ones that just taste like fall when you bite into them.
Besides Homecoming parades, sweet potatoes and falling leaves, one of the best things about fall must be the arrival of crisp apples. Add sweet coatings to embellish the easy taste of apples.
Chocolate Dipped Apples 1 package white chocolate candy melts (can substitute 1 package vanilla-flavored almond bark,) 10 small Red Delicious or Fuji apples, 1 cup chopped nuts, milk chocolate. Wash and thoroughly dry apples. Remove stems; insert cinnamon sticks or small bare sticks. Slowly melt chocolate or almond bark in a double boiler (water should not boil). Line a baking sheet with parchment paper or aluminum foil. Place the chopped nuts in a shallow dish close to the work area. Holding the apple by the stick, place in saucepan of melted chocolate. Turn to coat, using a spoon to ladle chocolate over the apple so that it is completely coated. Gently shake off excess. Place on lined baking sheet. While still warm, press chopped nuts onto the coated apple, if desired. Melt milk chocolate. Drizzle decoratively over apples. This is a basic recipe. For a Halloween look, purchase candy melts that are colored (and sometimes flavored) orange. Look for these at cake decorating stores, candy making supply shops, hobby stores and some large discount retailers. Using the same method as above, dip the apples in the orange-colored chocolate. After they are dry, melt milk or dark chocolate. Using a sucker stick or paintbrush, add a jack o’ lantern face to the dipped apple. Another fun Halloween look is dipping the apple in milk chocolate and drizzling the orange all around; very easy to do for a great effect. Candied Apples 8 Red Delicious or Fuji apples, 3 cups sugar, 1 /2 cup white corn syrup, 1 /2 cup water, 8 cinnamon red hot candies, 1 teaspoon red food coloring. Wash and dry apples. Insert a cinnamon stick or wooden craft stick into each apple. Butter a baking sheet and set aside. Combine sugar, corn syrup and water in a heavy saucepan over medium heat. Heat without stirring until it reaches 270 to 290 degrees F. Remove from heat and stir in cinnamon candies and food coloring. Quickly dip each apple in the hot syrup, turn to coat completely. Lift out and allow the excess to drip into the pan. Place on prepared baking sheet.
