Basic Game Sausages

  • 2 lbs. lean game meat, well trimmed
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. ground ginger
  • 1 lb. high-quality fatback
  • 1/4 tsp. ground cloves
  • 1 1/2 Tbsp. kosher salt
  • 1/4 c. good brandy or Cognac
  • 1 1/2 Tbsp. black pepper
  • Sausage casings


Mix all ingredients together and grind in a meat grinder or a food processor, using short bursts. Stuff the mixture into casings using a sausage horn; or simply form into small patties.
