Turkey Noodle Soup

Turkey hunting is a big thing here in the mountains where the bird is plentiful. Here is a recipe from a television series broadcast on WGN tv. I found it at www.winkelman.com. If you don't hunt, I'm sure a store bought turkey will be fine, but I must warn you, it won't taste quite the same.

Wild Turkey Noodle Soup

1 turkey carcass 6 quarts water 1/8 cup salt 3 tbsp. Pepper 1 tsp. Crushed garlic 1 medium onion (chopped) 2 stalks chopped celery 4 chopped carrots 1 bag egg noodles

Simmer the turkey carcass, salt, pepper, garlic and onion in a large pot with the water for one to two hours. After that time, remove all the meat from the carcass and place it back into the broth. Add the celery and carrots and simmer with the lid on for another 30 minutes. Stir in the egg noodles and simmer for another 20 minutes.
