I think this is my favorite breakfast (well except for the very rare occasions that my husband says "let's go out for breakfast") and they are so easy to make.
Breakfast Burritos 1 pound pork sausage 1 cup diced onion 2 cloves garlic, diced or pressed 18 eggs (or egg substitute) 1 cup grated cheese salt and pepper to taste 24 tortilla shells Brown sausage, onion and garlic. While the sausage is cooking, mix the eggs and seasoning in a bowl. I add about 1/4 cup water to this mixture to make the eggs "fluffier" when cooked. Drain the sausage mixture and then add the eggs to the pan. Scramble until almost set. Add the cheese and finish cooking. Warm the tortilla shells and add approximately 1/3 cup mixture to each one and roll up. I usually get 20 to 24 breakfast burritos from this recipe. Once rolled, place the burritos on a cookie sheet and in the freezer until frozen. Then store in a ziplock bag until ready to use. To heat, take the frozen burrito and wrap in a wet paper towel, place in the microwave for 2 minutes. If necessary cook longer. Let it sit for approximately 1 minute before eating. Breakfast burritos are very adaptable and you can add more or less ingredients as your family likes. You can add bell peppers and hash browns to this recipe. My sister likes them with a combination of green and red peppers for color. If I have time, I'll make two batches of these and add mushrooms to mine. The nice part about that is that it guarantees that no-one else will eat them! Other ideas are to substitute ham or bacon for the sausage or use various types of cheese. Experiment a little and find the combination that your family likes the best.
