Meatloaf Mini-SessionThis is one of my favorite mini-sessions and one of the quickest. Basically you mix the items and then freeze, very little cooking required until serving day. For my family of 2 adults, 1 child and 1 toddler, this will give me about 9 meals. Another short cut I use is to mix the meat mixtures in my stand mixer. I can toss in all the ingredients at once and it's mixed in just a few minutes. Shopping list 6 pound ground beef 2 cup finely chopped onion 3/4 cup saltine cracker crumbs 5 eggs (can just use egg whites if you like) 6 tablespoons milk 3 tablespoon prepared horseradish 3 jars or cans (12 ounces) mushroom or beef gravy 24 ounces bacon 8 medium white mushrooms, chopped 1/2 cup evaporated milk (or half & half) 12 ounces shredded Swiss cheese 1 cup corn flake crumbs Salisbury Steaks 3 pound ground beef 1 cup finely chopped onion 3/4 cup saltine cracker crumbs 3 eggs, slightly beaten 6 tablespoons milk 3 tablespoon prepared horseradish 3 jars or cans (12 ounces) mushroom gravy In medium bowl, combine ground beef, onion, cracker crumbs, egg white, milk, horseradish, 3/4 teaspoon salt and 1/4 teaspoon pepper, mixing lightly but thoroughly. Shape into oval 1/2-inch thick patties. (approximately 12 patties, but I usually get 15-16) Place patties on cookie sheet and freeze until solid. Store in ziplock freezer bag. I usually put mine 3 to a bag (my children are young enough to share one patty for dinner) and then put the bags of patties into a larger bag. On serving day, thaw the patties, brown them in a skillet, add gravy and simmer about 20 minutes or until the patties are cooked. Crockpot method: This is my short cut. I put the thawed patties into my crockpot and pour in the gravy. Cook on medium about 6 hours, can go longer. Bacon Mushroom Swiss Meatloaf (10-12 servings) 24 ounces bacon 8 medium white mushrooms, chopped 1 cup onion, finely chopped 3 pounds lean ground beef 2 egg 1/2 cup evaporated milk (or half & half) 12 ounces shredded Swiss cheese 1 cup corn flake crumbs In a large skillet, cook the bacon until it's crisp but not burned. Drain on paper towels. Remove all but a tablespoon of the bacon fat from the skillet and saute the mushrooms and onions until tender. Allow to cool slightly. In a large bowl, mix the beef, egg, and milk. Mix well. Add the mushroom/onion mix, bacon and Swiss cheese. Mix well. Add the corn flake crumbs and mix well. Shape into a loaf and place in a large loaf pan. Or divide into meal sized portions. Freeze.
