Refrigerator pickles are a great way to preserve this time of year. You can experiment with
different herbs, vegetables, vinegars, and sweeteners, and get some ideas of what you'd like to
pickle in larger batches when the garden is producing. From the simplest recipes of marinating
cucumbers and onions in a little vinegar and water (try adding lots of black pepper, salt, and
tomatoes, too!), to making brines and pickling cauliflower, onions, eggplant, carrots, and more.
Pickled Carrots 2 t garlic, minced 1 large bay leaf 3/4 t canning salt 1 cayenne pepper, opt'l ½ C sugar ½ C water 1 1/4 C white wine vinegar ½ C vegetable oil 1 small onion, cut in slivers 2 - 2 ½ C mini carrots, or peel large carrots, cut in quarters lengthwise, and then in 2 inch pieces Place first 8 ingredients in a 3 quart saucepan, and bring to a simmer. Cover and continue to simmer, stirring occasionally, for 5 minutes. Add the carrots and onion, and continue to simmer for about 5 minutes, or until the carrots are just starting to get tender. Remove from heat, leave covered, and let marinate until room temperature. Pour into a quart canning jar (or 2 pint jars), and refrigerate. Keeps up to 3 weeks in the refrigerator.
