Sprouts, part 2Or: What to do with the overflow when sprouting becomes an obsession! Usually, I keep a jar of sprouts in the refrigerator and another going on the counter, at all times. However, when I get on a Sprout Kick, or when they are really tasting good to me, or when I have harvested some new seeds and am curious as to how they will turn out when sprouted, I can end up with several quarts, all of which need to be used within a few days. Here's what you can do if you find yourself in the same predicament: Make Sprout Sandwiches Spread a piece of your favorite bread, or better yet, the center of a roll, with butter and cream cheese, then top that with as many sprouts as you can fit in your mouth. Yum!! If you are feeling a little daring, add a dash of hot sauce, or a slice of jalapeno. Sprout Salad Chop a hard boiled egg and toss it with a bowl full of sprouts with your favorite dressing. This quick lunch will provide you with energy throughout your busy day. Sprout Bread This bread has a "green" flavor, which, if you like sprouts, won't surprise you. My husband, on the other hand, just says "it tastes 'grassy'"! 3/4 C water 3 t vegetable oil 3 T honey ½ t salt 3 T wheat germ 1 C whole wheat flour 1 ½ C bread flour 3 T nonfat dry milk 1 ½ t yeast Combine all in bread machine in order stated by manufacturer, and cook on medium cycle. Add 1 C sprouts at the "beep." Makes a 1 pound loaf. Dried Sprouts Dry sprouts in your dehydrator for 6-8 hours (longer if needed) at 125 degrees. One cup sprouts yields about 1/4 cup when dried. Toss these in casseroles, soups, and breads. Dried Sprout Bread The dried sprouts add a nutty flavor to breads. 3/4 C beer 1 ½ t active dry yeast 1 ½ C bread flour ½ C whole wheat flour 2 T butter ½ t salt Combine all in bread machine, in order stated by manufacturer, and cook on medium cycle.
