Chances are, if you've planted a garden with zucchini in it, you are either overrun with it
already, or soon will be! I love zucchini, but after I've fried it, baked with it, grated and frozen
it, canned it with tomatoes and onions (recipe to be published at a later date), and given it away
until friends and family are avoiding me, I still am harvesting it and hate to throw it into the
compost pile.
Luckily, our favorite pickles are Bread and Butter, and zucchini makes a good substitute for cucumbers in most recipes. If you don't have your own recipe to play with, try mine: Bread and Butter Zucchini Pickles 2 quarts zucchini slices, about 1/4 inch thick 3 C sliced onions 1 C chopped green peppers Combine all above ingredients in a shallow bowl, and cover the surface completely with ice cubes. Allow the vegetables to sit under ice for 2 hours. After 2 hours, combine the following in a large saucepan: 5 C sugar 3 C cider vinegar 1 C water 2 T turmeric 2 T celery salt 2 T mustard seed 4 T chopped garlic Heat to boiling, stirring occasionally. Pack hot jars with the vegetables.....and pack them tightly, as zucchini seems to shrink in processing more than cucumbers. Pour the boiling brine over the vegetables, wipe the rims, and seal according to manufacturer's suggestions. Process in a Boiling Water Bath for 10 minutes.
