Being that April is soon falling upon us I decided for this month I will show you some recipes for special occasions.
This first recipe is to Honor the Scout and Brownie Leaders all over the world. It's one of their recipes from their Canadian Cookbook. Campfire Casserole Ingredients 1/2 pound bacon 2 pounds potatoes, diced 1 medium onion, diced 1 teaspoon salt, divided 1/2 teaspoon pepper, divided 12 large eggs 1 1/2 cups (6ounces) Cheddar cheese, shredded (optional) ketchup or salsa paper towels 1.) Cook bacon in a large skillet until crisp. 2.) Drain bacon on paper towels. 3.) Save 2 teaspoons of bacon drippings in skillet. 4.) Crumble bacon and set aside. 5.) Saute potato, onion, 1/2 teaspoon salt, and 1/4 teaspoon pepper in hot bacon drippings. 6.) Occasionally stir and cook for 20 minutes. 7.) Whisk eggs, remaining 1/2 teaspoon salt, and 1/4 teaspoon pepper together. 8.) Pour mixture over potato in skillet. 9.) Cook over medium heat until eggs set or for 4 minutes (stir if necessary). 10.) Sprinkle in bacon and cheese. 11.) Serve with the salsa or ketchup. (VEGETARIAN OPTION: Substitute bacon with Bacos or Bacon Bits and garnish with parsley.) Go To Page: 1
